GREEN MONSTER DIP

1 (10 oz.) package frozen chopped spinach, thawed, drained
1 1/4 cups (5 oz.) freshly grated Parmesan cheese
1 1/4 cups mayonnaise
1 (14oz.) jar marinated artichoke hearts, drained and chopped
1 ( 8 oz.) can sliced water chestnuts, chopped
1 roasted red pepper, chopped ( I used the ones you buy in a jar)
1 clove garlic, minced ( can substitute 1/4 tsp. garlic powder)
Crackers

Combine the spinach, cheese, mayonnaise, artichoke hearts, water chestnuts, red pepper, and garlic in a bowl and mix well. Spoon into a quiche dish or pie plate. Bake at 350 degrees for 20 mins. or until lightly browned. Serve warm with crackers.
